Chicken Pinapple Curry in a Crock Pot

I aired my secret here, on my addiction to cooking in a crock pot.  That being said, I have also discovered that you really can make ANYTHING in a crock pot.  Finding things that don't resemble stew or soup is not that tricky.  Just pick a family favorite, throw the ingredients in and set in on " low, low, low, low, low, low, low, low"

Behold- Chicken Pinapple Curry in a crock pot.
When we lived in the Prov, there was a small and run down Thai restaurant around the corner. They served this delicious dish, and I ordered each time we went there.  Obviously it was only a matter of time until I figured how to recreate it on my own....then try it in a slow cooker.

Here is how.

6 large chicken breasts, defrosted and cubed
2 cans of cream of chicken soup
1 can of pinapple chunks
2 tablespoons- 1/4 cup  curry powder-  you can vary this a bit depending on your family
chopped green onions or bamboo shoots optional

Throw it all in, give it a good stir, set it on low for 6 hours or so.

Serve it over white rice while you imagine you are in Ko Samui.
Funny enough I actually went to Ko Samui once, and didn't eat curry my entire week stay???  What WAS I thinking.

  1. Oooo, I was just about to start making my weekly dinner menu when I noticed your new post. That sounds so good! And shock of all shocks - I have a glut of cream of chicken soup and nothing to make with it. I am definitely trying this dish this week!

    HA HA. I too have a surplus of cream of chicken soup another reason why this is such a perfect dinner. Let me guess. You can't say no to a good case lot sale either.

  3. Yesterday I realized actually have more Tomato Soup than Cream of Chicken! How did that happen?
